Hello folks! This is André here. So this post for our Almond Butter & Banana Toast is really more of a how-to than an actual recipe, since there is no cooking involved. It's a quick go-to snack that combines some of our favourite flavours and is packed with energy to get your motors going in the middle of the afternoon. All you need is some toasted bread (whichever quality you'd like), a few spoonfuls of almond butter (or any other nut butter, peanut is also stellar), a ripe banana, a sprinkle of coconut sugar and some chopped almonds. I'm so not lying when I say we snack on some sort of variation of this recipe every single day of the week. Whether we pair it with a smoothie for breakfast, have it as a mid-morning snack or eat it late in the afternoon, we just cannot get sick of how deliciously rich these toasts are. If you've salted your almond butter when making it or perhaps just sprinkle a little fleur de sel on top, it tastes even better.

Don't be scared of our suggestion of sprinkling sugar on toast, coconut sugar is actually one of the healthiest and most-sustainable alternative sweeteners. It contains traces of nutrients such as potassium, phosphorus and magnesium (among many others) and it ranks considerably low on the glycemic index, which means it doesn't have a dramatic impact on blood sugar levels. Along with the many health benefits associated to almond butter and bananas, the coconut sugar turns this toast into the perfect sweet treat.

Almond Butter & banana on toast

5 minutes |  makes 4 toasts  |  serves 2

Healthy Vegan Almond Butter & Banana Toasts

INGREDIENTS

4 bread slices, lightly toasted ( use gluten free if intolerant to gluten )
4 tbsp almond butter ( or more! )
1 large ripe banana, sliced
4 tsp coconut sugar
a few almonds, chopped
a sprinkle of fleur de sel ( optional )
 

STEP BY STEP

Start by gathering, preparing and measuring all of the ingredients. This will improve your dynamic in the kitchen. 

  1. Spread 1 tablespoon of almond butter on each of the toasted bread slices.

  2. Layer the banana slices on top.

  3. Sprinkle 1 teaspoon of coconut sugar each and a few pieces of chopped almonds on top.

  4. Season with a small pinch of fleur de sel on top in case your almond butter isn't salted.

  5. Enjoy while the bread is still warm!
